Ingredients

Vegetarian Pocket Sandwich

Assemble Vegetarian Pocket Sandwich with pita bread or make your own foccacia!
Drizzle with Sweet Sesame Dressing.

  • 1 whole pita bread, drizzled with 1/4 teaspoon of olive oil
  • 1/3 whole avocado
  • 1/2 ounce daikon, or black radish…shaved paper thin
  • 1/3 whole tomato, sliced approx. 2 oz.
  • 1/8 ounce alfalfa sprouts
  • 1/3 ounce sunflower shoots
  • 1/4 ounce red onions, shaved paper thin
  • 1/2 ounce cucumber ribbons

Sweet Sesame Dressing

  • 1 egg yolk plus 1 tablespoon water
  • 2/3 cup vegetable oil
  • 1/3 cup olive oil
  • 2 Tablespoons sesame oil
  • 1 tablespoon agave
  • 1/4 cup sesame seeds…toasted in a saute pan over moderate heat
  • 1 teaspoon grated fresh ginger
  • 1/4 cup rice vinegar
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Foccacia

  • 3 tablespoons flour
  • 1/2 cup warm water
  • 2 whole garlic cloves
  • 1/4 cup white wine
  • 1/4 cup olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh oregano
  • 2 cups milk
  • 5 cups flour…plus extra if needed
  • 1 tablespoon salt

Prepare the Foccacia

To make the initial sponge, add the warm water to the yeast to dissolve in a stainless bowl, then add the flour. Allow to rise for 10 minutes.

In a small saute pan, add chopped garlic, white wine and olive oil. Simmer slowly until the garlic is cooked through and soft. A small amount of liquid will remain…reserve liquid. Mash the garlic with a fork in the liquid.

To the sponge, add all the remaining ingredients and mix well together.

Cover stainless bowl with food film and place in a warm area of the kitchen.

Allow dough to rise to double in bulk. Remove from bowl and portion. Wrap in food film and refrigerate until ready to use. Allow dough to come to room temperature before rolling out.

Prepare the Sweet Sesame Dressing

In a stainless bowl or food processor add egg yolk and 1 tablespoon water.

Whisk to blend. Add ginger and toasted sesame seeds.

Drizzle in slowly the vegetable and olive oil. Add sesame oil, agave and vinegar.

Whisk together then add salt and pepper to taste. Adjust sweetmess to taste with agave.
