Shrimp Boil

“…to be used for the seasoning of fresh shrimp, after being boiled in salt water”

Boil shrimp in a mixture of 2 quarts of water and 1/4 cup of salt. As soon as shrimp are cooked, remove from salt water and cool in "iced" shrimp boil. Allow to set for 10 minutes. Boil can be used twice.

Ingredients

  • 1 gallon water
  • 2 tablespoons crushed red pepper
  • 1 tablespoon cayenne pepper
  • 1/3 cup salt
  • 2 whole lemons – halved
  • 2 tablespoons black peppercorns
  • 1 whole onion – coarsely chopped
  • 6 whole cloves garlic – chopped
  • 2 tablespoons chili powder
  • 1 tablespoon paprika
  • 2 whole cloves
  • 2 teaspoons allspice
  • 1 tablespoon crushed fennel seed
  • 2 whole sprigs of parsley
  • 1/3 cup white wine vinegar
  • 4 whole bay leaf

Prepare the Seasoning

  1. Add all ingredients to a stainless sauce pot and bring to a rapid boil.
  2. Reduce heat and allow to simmer for 20 minutes.
  3. Remove from heat, strain liquid through a fine-mesh strainer or Chinois and chill
