Green Onion Remoulade

Green Onion Remoulade Recipe by Gerard Maras

"Gulf Shrimp with Green Onion Remoulade. A great appetizer or lunch salad. Fresh, simple and delicious. "

Ingredients

  • 1 1/4 cups vegetable oil
  • 1/3 cup white wine vinegar
  • 1 egg yolk
  • 1 tablespoon Creole Mustard
  • 1 cup green onion – sliced
  • 1 clove garlic
  • 1 teaspoon crushed red pepper
  • 1/2 teaspoon salt
  • 2 tablespoons water

Prepare the Remoulade

  1. In a food processor add water, garlic, egg yolk and mustard
  2. Process and gradually add half of the oil
  3. Add green onion, and seasoning
  4. Add remaining oil and the vinegar
  5. Adjust seasonings, let set in refrigerator for 1 hour then readjust seasoning if necessary.

Serve with Boiled Gulf Shrimp, sliced fresh Creole tomatoes and garden greens
